Bring the fillet to room temperature and season generously with sea salt and cracked black pepper.
Heat a heavy cast-iron skillet until smoking hot, add a splash of oil, and sear the fillet for 2-3 minutes on each side.
Add a large block of butter, crushed garlic, and rosemary to the pan; baste the meat continuously for another minute.
Rest for 5 minutes before slicing to keep it incredibly juicy.
